Chocolate Pecan Waffles with Strawberries

These taste as good as they look, great for a special occasion.

Makes 20 small waffles or 7 large.

Ingredients

Chocolate Pecan Waffles with Strawberries
  • ¾ cup semisweet chocolate chips 3 eggs
  • ¾ cup butter, cubed 1 ½ cups of milk
  • 2 cups all-purpose flour 3 teaspoons vanilla extract
  • 3 teaspoons baking powder ½ cup chopped toasted pecan
  • ¾ teaspoon salt Sliced strawberries

Directions

  1. In a microwave safe bowl, melt chocolate chips and butter, stir until smooth. Cool to room temperature.
  2. In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl whisk eggs, milk and vanilla; stir into dry ingredients until smooth. Stir in pecans and chocolate mixture (batter will be thick).
  3. Cook in a preheated waffle iron. Garnish with whipped cream and strawberries (or raspberries).
