Irish Soda Muffins
These muffins are great for St. Patrick's Day, but they are great any day of the year. If you love soda bread you will love these muffins.
1 1/2 cups unbleached all purpose flour
3/4 cup white whole wheat flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup granulated sugar
1 1/2 cups currants
1/2 to 2 teaspoons caraway seeds, to taste
1 large egg
1 cup buttermilk
6 tablespoons butter, melted
sparkling white sugar for topping
Preheat oven to 400 degrees. Lightly grease muffin pan (12 count).
In a medium size bowl whisk together the flours, baking powder, baking soda, salt, sugar, currants and caraway seeds.
In a separate bowl whisk together the egg, buttermilk and melted butter.
Quickly combine the dry and wet ingredients; stirring until just mixed. Do not over-mix as this will make the muffins tough.
Spoon batter into prepared muffin pan, filling cups about 3/4 full. Top with sparkling white sugar.
Bake for 20 minutes or until a toothpick inserted into center comes out clean. Let cool in pan for 5 minutes. Remove immediately and cool on a wire rack.
