Works well with mixed berries or peaches as substitute for mango
Refrigerate in an airtight container, up to 1 week
Makes 3 cups of puree.
Mango Puree - Combine 2 ripe mangoes, peeled, pitted and cut into chunks, 1/3 cup of sugar, and 2 tablespoons of water in a blender and puree until smooth.
For each parfait spoon 2 tablespoons of Mango Puree into a glass and add 1/4 cup of yoghurt. Repeat layers and top with 1 tablespoon of toasted coconut, a blackberry or raspberry and a sprig of mint.
