Our Famous Cowboy Cookies

We used to make different cookies each day, but our returning guests always wanted Janet's Cowboy Cookies. 

Makes 3 ½ to 4 dozen cookies. We often freeze the batter and then defrost it when needed. Works great if you only want a few at a time.


Our Famous Cowboy Cookies
  • 2 ¼ C Shortening (we substitute 2 C butter and ¼ C Vegetable Oil)
  • 2 C Sugar
  • 2 ½ C Brown Sugar
  • 5 Eggs
  • 2 tsp Vanilla Extract
  • ¾ C Chunky Peanut Butter
  • 4 ½ Cups all-purpose Flour
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 3 C Rolled Oats
  • 2 ½ C Bran Flakes or other Cereal
  • 2 C Chocolate Chips (we mix half semi sweet and half white)
  • 1 C Chopped Walnuts
  • ½ C Shredded Coconut


Cream together the shortening and sugars. Add the eggs, vanilla, and peanut butter. Sift together the flour, baking soda, baking powder, and salt; add to the creamed mixture. Add oats, bran flakes, chocolate chips, and walnuts; mix well. Drop by rounded 1/8 cupfuls onto a greased cookie sheet (we use a small ice cream scoop and silpat baking mats). Bake in a 350F oven until the edges turn brown and the centers still look chewy (about 12 mins).
