We used to make different cookies each day, but our returning guests always wanted Janet's Cowboy Cookies.
Makes 3 ½ to 4 dozen cookies. We often freeze the batter and then defrost it when needed. Works great if you only want a few at a time.

Cream together the shortening and sugars. Add the eggs, vanilla, and peanut butter. Sift together the flour, baking soda, baking powder, and salt; add to the creamed mixture. Add oats, bran flakes, chocolate chips, and walnuts; mix well. Drop by rounded 1/8 cupfuls onto a greased cookie sheet (we use a small ice cream scoop and silpat baking mats). Bake in a 350F oven until the edges turn brown and the centers still look chewy (about 12 mins).
