Irish Soda Muffins

These muffins are great for St. Patrick's Day, but they are great any day of the year.  If you love soda bread you will love these muffins.

Irish Soda Muffins


1 1/2 cups unbleached all purpose flour
3/4 cup white whole wheat flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup granulated sugar

1 1/2 cups currants     
1/2 to 2 teaspoons caraway seeds, to taste
1 large egg
1 cup buttermilk
6 tablespoons butter, melted
sparkling white sugar for topping


  1. Preheat oven to 400 degrees.  Lightly grease muffin pan (12 count).
  2. In a medium size bowl whisk together the flours, baking powder, baking soda, salt, sugar, currants and caraway seeds.
  3. In a separate bowl whisk together the egg, buttermilk and melted butter.
  4. Quickly combine the dry and wet ingredients; stirring until just mixed. Do not over-mix as this will make the muffins tough.
  5. Spoon batter into prepared muffin pan, filling cups about 3/4 full.  Top with sparkling white sugar.
  6. Bake for 20 minutes or until a toothpick inserted into center comes out clean.  Let cool in pan for 5 minutes.  Remove immediately and cool on a wire rack.
